What happens at an oyster tasting?
A tasting sets several varieties side by side so you can compare them directly — usually four to eight oysters from different regions, eaten in order from mildest to brineiest. The host talks through where each one grew and why it tastes the way it does. Most tastings pour a wine or beer alongside. Expect 60 to 90 minutes.
What do you learn in an oyster shucking class?
How to hold an oyster safely, where to find the hinge, how to twist rather than force the knife, how to cut the adductor muscle cleanly without shredding the meat, and how to check for shell fragments. Most classes run one to two hours and send you home able to open a dozen. A shucking glove and a proper oyster knife are usually provided.
